Task

Hummus.

Find a Middle Eastern diner that you know of, or has been recommended to you. Investigate where the Hummus they serve originated. The purposes is to investigate diversity. Does the Lebanese hummus taste different from the Israeli or the Syrian one? Find out if there is a secret ingredient.

Your task is to become a hummus specialist, both academically and artistically (in the kitchen). Serve anyone you like Syrian hummus with tears.

What did I make? Many kinds of hummus in my kitchen, experimenting with different recipes. I made a painting using the diagram from the Jewish Kabbalistic Tree of Life, and I put all the ingredients of hummus in the “Sephirots” of the Tree. They fit perfectly. The words are in Arabic. They mean: Chick Peas with Tahini. Hummus is old, from the Middle East, and it is unknown if it originated in the Jewish kitchen or the Islamic one.
